maybe insects under the bark? Maybe he can actually hear/smell the sap? My goats peel bark off some trees (with their horns) to get at the sweet sap. They score the bark on cedars and rub the sap on their horns then rub their horns over their backs. Probably something attracting him if he is doing it only to one tree or one type of tree. Oak trees and maples can be toxic, keep an eye on him, he might get an upset stomach.

Probably just something to chew on-he may really like the texture. I would look into investing in some chewey toys!
