can a dog emit an odor when it is afraid?

my cocker spaniel never likes to have his ears touched and when grooming him, his tongue changes color and he suddenly has a horrific odor that goes away with a bath til the next time we try grooming

I don't remember seeing anything about that from a reliable source. But yes, I think dogs can make themselves smell doggy. Perhaps they tense up and a little material comes out their anal glands or from their paws.

Perhaps having his anal glands emptied frequently would disarm him.

I have more confidence in things where my reading confirms my experience.

The dreaded anal gland stink. Don't know how to describe it, but it's the smell of fear alright.

You say ears.?? Have you had the vet check those out? Dogs like this with floppy ears can get infections. Maybe that is your mysterious smell?
Also, he needs a check on the heart if his tongue swells and a blood test as this can either be a circulatory thing or diabetes.
I would say this might be more of a medical issue then the anal gland or a body odor. goodluck
