I agree with the type of the food your feeding him, but it could also be an ear infection. Try some over the counter dog ear wash.

Bathing once a week is way too much & could be part of the problem Feeding a food that is lower quality can also lead to stinky dogs. Try switching to a grain free food & only bathe every few weeks.

I doubt some kind of skin problem is a culprit. You can take them to a vet and let him examine the problem.
