What do I do if my small dog (shitzu) ate a pound of deli ham meat in one sitting?

Skip meals tomorrow, leave out lots of water, keep it off the carpet (in case of puking), sleep lightly and be ready to take it out to toilet.

Unless he/she shows signs of distress don't worry about it.

I hesitate to ask, but just how did a Shih Tzu get hold of deli ham? As you said, small dog. ??
Climbing Shih Tzu?
Wings?
Or one amazing jumper???
Can't be a Fridge thief, too small to open doors....I think.

The only thing that's bad about her having eaten all that is the high sodium content. Make sure she drinks a lot of water!
The first two posts gave good advice.

How did she get a hold of it?

I would not warry the salt content I don't think will hurt the dog
