|I found this recipe over at the Home Cooked Foods & Recipe Group (here on Dogster!) I hope that it it's ok that I copied & pasted it here in the Home Prepared Food & Recipes Forum. If not, just let me know! This recipe sounds SO PAWSOME, I wanted to share!!!! Kudos and two paws up to the owner of this recipe!!!
Berry Chicken Salad
1-1/2 cups yogurt (we use plain or maple)
2 tsp. honey
1 cup pasta or rice, dry
4 cups cooked, cubed chicken
1 cup chopped celery
1 cup raspberries
2 cups blueberries
1/2 cup walnut pieces
1 tsp. cinnamon
In large bowl, combine yogurt and honey and mix well. Prepare pasta or rice according to package directions. Drain well (if pasta) and add to yogurt mixture. Add remaining ingredients and toss until coated. Cover and chill until ready to serve.
Vaughn's version of this recipe omitted the chicken in favor of chopped hard boiled eggs and substituted quinoa for the pasta/rice. Other yummy fruit substitutions are apples, dried cranberries, or a bit of coconut.
1. Other flavors of yogurt are also great in this recipe. Our preferences are rather plain, but Mom hears from her clients that lemon and raspberry are popular yogurt flavors. If you decide to branch out and try other flavors, make sure to check the label for added sugar. Flavored yogurt sometimes has lots of things in it you wouldn't expect.
2. We like this served up in a stainless steel dish, but it's especially refreshing right out of the freezer (muffin cup liners or a full tin are perfect for freezing these tasty Dane snacks). If you do plan to freeze, it's wise to increase the amount of yogurt so the other ingredients have a better chance to set solidly.
