It's bow season, my neighbor got a male over the weekend and brought us the heart and liver. Always thinking of my nutty dogs!

Anyway, my brother-in-law calls tonight and says "My dad got his first deer of the season..." but not the way we were expecting to hear! His dad has actually not hunted yet at all. He lives in the country... he was doing something in the back yard when he heard brakes screeching and a thud. He ran around the front of the house to see a car driving away. He ran into the road to see what happened -- someone hit an 8-point buck. He was badly injured but still alive... frown so to end its suffering he shot it. So my brother-in-law called and asked what parts I want from him.

I've never hit a deer before so I could be wrong, but if you're on a road where it's feasible, can't you check to see if the deer is still alive and if it is, call a police officer to have someone come and end its pain? Laying there freaked out and bleeding to death is a much more horrible death than a quick bullet... these people just drove away.

Ugh. Yeah, technically calling the cops is what you're supposed to do, and it's illegal not to do it. The police are trained in dealing with road-kill and injured animals, and it's part of their job to make any calls to animal control and/or the DNR, or to "deal with it" themselves and then call. Obviously leaving an animal hurt is just plain cruel, and a hazard for people and animals, too, if it's "just hurt" and decides to get back up and wanders around injured.

That said, getting close to the deer or whatever you or someones else has just hit (even if it's small) is a REALLY bad idea. As dog owners, we all know that when animals get hurt they get freaked out, and can lash out at anyone trying to help them. The last thing you want is to be on the "business end" of a hoof or teeth. Animals that seem dead aren't always, and even when dead, there are post-mortem nerve twitches that can make the legs "kick". Use extreme caution.

That's cool that you can have some or all of this deer, though -- I mean if it had to go that way. At least someone's going to use it. So, do you have the option of taking it all if you want it? Is your B-I-L's dad taking the meat, and giving you the rest of what you want? Maybe he just wants the prime cuts? I'd at least ask for all the organs except for the intestines -- stomach is up to you and him, it's gross and BIG and harder to deal with than the rest. I'd take whatever else is left given your freezer space. A hack saw and a sharp knife will enable you to cut whatever you need into meal sized pieces.

Meaty legs will be TOTALLY awesome RMBs for Kolby and Guster. You can cut the meat with a knife down to the bone, then use a hack saw (the fewest teeth-per-inch blade you can get, the better) or actual bone saw to cut thru the bone itself to make good, safe sections. The spine or "neck" cut into about 8" sections would also be great. Ribs are awesome -- again, use a knife to cut flesh, and the saw to get thru the bone. You get the idea. There are no "useless" parts of a deer when the dogs are concerned!

Thanks Meridian. I think he is going to be using the meat, but like you said I have to imagine he will probably just want the prime cuts. I asked for any organs except for stomach/intestine, but I wasn't sure exactly what meat gets cut from the deer in what location so I didn't ask about the rest of it yet. It's a little late to call him now (11:30 here on EST) but tomorrow I'll give a shout to see if there's any chance for legs, ribs etc -- I'm assuming he's already done a lot of taking apart... I don't know anything about that process so I'm just guessing by assuming you start "breaking it down" immediately to get the meat refrigerated/frozen...

If he's looking for "prime cuts" he's mainly going for the meat that lays on either side of the spine, and maybe the "roasts" that come off the legs. Good news for you is that given the shape of the vertebrae of the spine there's ALWAYS lots of great meat for the dogs left on the "neck bones" even after the "loin" has been taken. Definitely get that.

Leg roasts are kinda the same -- even after the huge chunk of meat has been removed, there's still generally LOTS of meat left. Perfect dog food. It's when people want every scrap to make ground meat and sausage that bones really get picked clean and leave the dogs with bones that aren't even worth it for them.

A lot of people don't even like dealing with the rib sections unless they want "hamburger" so he might give you those, which would be awesome!

Poor Bambi... hopefully lucky Kolbe! I'm glad your dad was able to shoot it and put it out of its pain.

The respectful thing is to tear into it and chomp it up. Don't forget the ancients considered eating the heart to be a way to honor one's enemy. I always tell the cats that. If you eat that cow's heart you will gain all the courage and spirit of the cow!

I'm not sure Miss.

He dropped by yesterday to give me the heart, liver and 2 kidneys. He still had more to do, he said there was a spleen but wasn't sure if I wanted it -- I said if he could then I'd use it. I'm going to have to see about the legs and whatnot -- I think he was planning to have the meat stripped to do venison burgers and "breakfast sausage" but not totally sure yet.

Chances are high that where the vehicle struck the deer, he will not want the meat. It will be badly bruised, and not an excellent choice for sausage, etc. You may ask him to keep the trashed out area for you as well. Road kill is quite common in many areas. You may score an entire deer if you spend a few minutes and call your local game warden and ask him if you could be on a donation list for road kill or illeagally taken deer. If you tell the game officer it is for your dog, he may or may not bring you human grade meat. If you don't tell him it is for Kolbe, you may be put on a waiting list, etc. Play it by ear when you call him. If the warden is nice enough to bring you a deer, and you have a meat thermometer, insert it into the thickest part of a back leg. If the temperature is 99 F or below, it is for the dog. 99.1 or above could be used for Kolbe or even yourself. The temperatures I quoted are a guide I use, if external temperatures are approximately 18 degrees F. with a 12 m.p.h wind.
