My mom uses a slicker brush on me everyday or almost everyday and I don't get matted. She uses high quality people shampoo on me so maybe that helps. She's also occasionally used a vented brush made for humans. I am 10 years old and have very oily hair, to the point where it looks greasy if I don't get a bath for a week so your hair may be a little different than mine.
On age, the vet can sometimes tell by your teeth. Once you get up there, they can also tell by your frame. Generally, older dogs might feel a little less toned than older dogs, I can't think of how to describe it. Some vets know how to judge by frame and some groomers can make pretty good guestimates as well.
