The best way to spot the allergy??

Hey All! Phil is new to the group. I've had him about two months and he's suspected to have IBD/food allergies after blood and fecal work have revealed nothing else wrong. My vet want me try try different protein sources to try and see what he's allergic too, but if i try something and his diarreah gets worse, should i change to the next food right away? or do the slow transition to the new food? won't that still hurt his tummy as long as the culprit is still present? Phi is responding HORRIBLY to this Natures variety Duck, and i want to switch him quickly, but I don't want to upset him more.
