1 32 oz bag of frozen southern style hashbrown potatoes
1 lb of bacon cut into pieces, fried and drained
1/2 cup diced onions
3/4 lb cheddar cheese diced
1 dozen eggs
1 cup milk
1/2 tsp dry mustard
salt & pepper
Layer the frozen potatoes, bacon, onions, and cheese in the crockpot in two or three layers. Finish up with cheese. Beat the eggs, milk and mustard, salt & pepper together. Pour over the whole mixture. Cook on low for 6 to 8 hours. |  |  |  |  |

1.5 lbs lean ground beef *(can also substitute ½ ground beef and ½ Italian sausage)
1 medium onion, chopped
2 garlic cloves, minced
1 28 oz can peeled tomatoes, in thick tomato puree
1 15 oz can tomato sauce
2 tsp Italian seasoning
1/4 tsp pepper
1 lb bow-tie pasta or fettucine, freshly cooked
1 10 oz pkg frozen chopped spinach, defrosted and squeezed to remove excess moisture
2 cups ricotta cheese
1/2 cup freshly grated Parmesan cheese
In a large skillet over medium-high heat, cook the ground beef, onion and garlic, stirring often to break up lumps, until the meat loses its pink color, about 5 minutes. Tilt the pan to drain off excess fat, then transfer the beef mixture to a 3.5-qt slow cooker.
Add the tomatoes with their puree, the tomato sauce, Italian seasoning, and pepper, stirring to break up the tomatoes with the side of a spoon. Cover and slow cook for 7 to 8 hours on low.
Skim the fat from the surface of the meat sauce. Stir in the cooked pasta, spinach, and ricotta and Parmesan cheeses, and slow cook for 5 more minutes. |  |  |  |  |

1 can whole tomatoes
1 small onion, cut into pieces
1 clove garlic, minced
1/2 tsp. ground red pepper
1/2 tsp. salt
1 (6 oz.) can tomato paste
1 lb. ground beef, browned
2 c. shredded cheddar cheese
9 corn tortillas
*I think I’d add some cumin and chili powder, maybe use Mexican cheese instead of cheddar, or ½ cheddar and ½ monteray jack cheese*
Blend tomatoes (undrained), onion and garlic in blender or food processor. Pour into med sauce pan. Add red pepper, salt and tomato paste. Heat to a boil; simmer for 5-10 min. Place 3 tortillas in bottom of crockpot. Layer on tortillas 1/3 of the ground beef, 1/3 of the sauce and 1/3 of the cheddar. Repeat layers two more times. Cover and cook on Low 6-8 hours. |  |  |  |  |

I know.....you're not used to eating those "one pot" meals....I'm not either ...that's why I hardly use mine, but with so many of us here that week, I think we just might have to do some meals in the crock pot.... |  |  |  |  |

I agree Mary....we don't use ours alot, but when there's a crowd of you and you've been out all day, it's great to come in, stick the crockpot on the table, some salad, bread and off you go! Easy and quick
Don't worry about going out before we get there and getting all the ingredients though Mary....we could decide one day what's on the menu the next and get the stuff then maybe...so you don't end up spending loads before we get there on a larder full of ingredients that might not get used!! (Only a suggestion) I'm gonna bring a few Scottish goodies for your larder  |  |  |  |  |
