Hey Abby - I saw you wanted a quiche recipe. Mom makes this for Sundays sometimes.

1 9inch pie shell unbaked
1 1/2 cups ham cubes
1 1/2 cup shredded cheddar cheese
1 cup o'brien shredded potatoes (frozen)
5 eggs well beaten
salt & pepper

You can mix all the ingredients in a large bowl then pour into the pie shell or do it in layers (ham, potoatoes cheese then egg mixture). Bake at 425 degrees for 5 minutes, reduce heat to 375 and bake for 45-60 minutes, until lightly browned and well set.

Mom found that if she covers the pie shell crust with foil, it doesn't burn the crust and cooks evenly.
