Here's two Lemon Bar Recipes that my Mom uses---they are both delicious!

Recipe 1
Cookie Base
1 cup (2 sticks) butter
1 cup sugar
2 cups flour
1 1/4 cup oatmeal (not instant)

Lemon filing
Juice of 3 lemons
Zest of 2 lemons, chopped fine
1 (14-ounce) can sweetened condensed milk

Cream butter and sugar, then add the flour and oatmeal to make the dough (it will be a little crumbly). Set aside. Stir juice and zest into milk. Set aside. Butter (or spray) a 9 by 13 inch pan. Press two-thirds to three-quarters of the dough into the pan. Spread lemon/milk mixture evenly over the top of the dough. Sprinkle the remaining dough (kind of like streusel) over the top. Bake at 350 degrees for 30 to 35 minutes until golden. When cool, slice into 1-inch squares. These are very crumbly !!!!!




Recipe 2
Cookie Base:
1 cup unsalted butter, melted
1/2 cup powdered sugar
2 cups unbleached allpurpose flour

Lemon Filling:
2 cups sugar
4 tablespoons unbleached allpurpose flour
1/2 teaspoon baking powder
4 eggs
7 tablespoons fresh lemon juice
1 teaspoon fresh lemon rind

Preheat oven to 350 degrees. Mix together butter, powdered sugar and flour until well blended. Press mixture into the bottom of a 9x13-inch glass baking dish. Bake for 20 minutes.
Sift together sugar, flour and baking powder into a mixing bowl. Add eggs, lemon juice and lemon rind. Beat by hand or with electric mixer until well blended. Pour mixture over crust and bake for 25 minutes.
Allow bars to cool, then dust with powdered sugar and cut into squares.

Here's my treats that Mom makes for me----she makes them in all different shapes for me !


MACKENZIE SPECIALS
2 cups whole wheat flour
1 tablespoon baking powder
1 cup unsalted natural peanut butter
1 cup skim milk


Preheat the oven to 375 degrees F . Grease cookie sheets.
Stir together the flour and baking powder; set aside.
In a medium bowl, mix together the peanut butter and milk. Stir in the flour mixture until well blended. Turn out dough onto a lightly floured surface and knead until smooth. Roll out to 1/4 inch thickness and cut into shapes using cookie cutters. Place 2 inches apart on the prepared cookie sheets.
Bake for 20 minutes in the preheated oven, or until lightly brown. Remove from cookie sheets to cool on wire racks.
