We all love to save a buck, right? So, a fun thread will be for us to post our easy and cheap dinner recipes.

Mac n Cheese with a can of tuna thrown in! Does not get much easier or cheaper with that one!

I make up those box meals where you bake and just add meat to it. Real simple and Only one pan for the mess.

Good idea for a thread! I LOVE easy.


My favorite beef roast recipe and so simple

3 thicknesses of foil
Sprinkle 1/2 dry onion soup mix on bottom of foil
Lay beef roast over top
Sprinkle rest of soup mix on top
Wrap foil around roast tightly

Bake 300 for about 3 hours, depending on size of roast. And if it's too hot to heat up your kitchen, you can do this in your gas grill. (Our grill has two burners) Turn one of the burners off, and put the roast packet over the unlit burner.

This is actually really easy as well as quite inexpensive:

CONGEE (JOOK)

Yield: 1 Servings (may be doubled etc. fort more people)

1 c Long grain rice
3 qt Stock
2 tb Minced Chinese preserved turnip
1 sl Ginger root, minced
1 Piece tangerine peel, soaked to soften and minced
Salt

GARNISH
Chopped green onion
Chopped coriander
Sliced preserved ginger
Sliced tea melon

Combine rice, stock, preserved turnip, ginger and tangerine peel in a large soup pot and bring to a boil. Lower heat and simmer, uncovered for approximately 1 to 1 1/2 hours or until the rice is thoroughly broken up. Stir occasionally to prevent soup from sticking and add boiling water if necessary. When done, soup should be thick and creamy. Add salt to taste and garnish with any or all of the suggested garnishes.

VARIATIONS: Just before serving, add cooked chicken, pork, ham or beef. Or with rice add diced forest mushrooms, soaked to soften or dried shrimp.

Oh, Sinenna, you have a chef for a mommy! Glad to see you guys in the group!! Enjoy!

Also, thanks for the pot roast recipe. I am going to do that one when it gets cold, for sure. I always knew onion soup as used for a lot. But never considered that. Much more flavorful than my usual seasoning salt.

Okay for feeding a large crowd:
'Chicken a la goopa''

1 packet onion soup mix
1 bottle of catalina or russian dressing (the red, not the creamy) or french (again the red) dressing
1 bottle of apricot jam
couple of pounds of cut up chicken
rice

Mix the ingredients together in a bowl, spread over chicken in large cassorole or if you are adventous a foil-lined large pan.
Bake 350 degrees for one hour, can turn up oven to 375 for 15 minutes if you like crispy skin.
otherwise check for doneness.
Cook rice, serve chicken over rice.
Fun and tasty for all

Here's another chicken recipe:

Blend the following together in a shallow pan for marinade:
1/4 cup soy sauce
1/4 cup olive oil
1/4 cup wine
2 Tbs lemon juice
dash black pepper
dash garlic salt
2 Tbs crushed onion (or I have used some dried onion)
1/4 tsp ginger

Add boneless chicken breasts, turning to coat both sides. Marinate for several hours. Grill 8-10 minutes depending on thickness.

This chicken is great for sandwiches or as the meat in a salad.

Greek Spaghetti (on the cheap):

Thin spaghetti noodles

1 can crushed tomatoes
1 can diced tomatoes
12 chopped green olives
1/4 tsp garlic
salt/pepper to taste

3 tbsn olive oil
1/2 pound ground lamb
brown lamb & sautee the veggies
cook paste
toss together
