2 chicken thighs or white meat
1 stalk celery, finely chopped
3 carrots, finely chopped
2 c brown rice, uncooked
Place chicken pieces in larg pot, cover w/cold water. Add carrots and celery, cover and simmer on low for about 2 hours, until chicken becomes tender. Add rice, cover, cook on low heat for about 30 minutes, until rice is tender and most of the liquid is absorbed. Remove from heat. Pull the chicken meat off the bone and discard bones in trash. Return shredded pieces to pot and stir well. Let cool, store in refrigerator or freeze. |  |  |  |  |
