Have you had him tested for worms? A lot of parasites have 3 - 4 week breeding cycles that could be triggering episodes. That's why vets will frequently give double-doses of dewormers, one to be given immediately, one to be given 3 weeks later.

Otherwise I agree with looking into a premade raw, short-term, to help him stabilize. He'd be getting the same thing every day without you having to worry about balancing everything out for him.

I have heard of coconut oil causing gross poop too, and chicken quarters are very boney to make up so much of a diet. Excessive bone can cause diarrhea as well as constipation, so it may be less of a chicken issue as a balance issue.
