|Tiller my family's dog when I was a kid "bit" me more times than I can count and there was never any suggestion of having her euthanized. She hardly ever broke the skin though, usually just left teeth marks so more of a "correction" than an actual bite-- as I was a year younger than her and my parents got her before I was born I think she may have seen me as a "young puppy" when I was a kid. This was not even THAT long ago either.
She also had to be penned up when people were over, she especially did not like kids and if she was free when they came over she would attack their shoes. If a stranger tried to pet her she'd snap at them. Unfortunately since she was small and cute (about 12" and 17 pounds), people always wanted to pet her. They'd either assume she was friendly, or they would ask to pet her while simultaneously reaching for her so by the time they finished asking to pet her their hand was already within snapping range... She lived to be almost 17 years old. She was an ill-tempered dog and also probably poorly socialized as my parents didn't really know much about raising a puppy I think.
Also Tiller you said: "The Pit Bull and Am Staff typically are gregarious. But if the stranger has ill intent, this breed will put themselves on the line."
That is funny to me because it sounds like Bianca. She's a lot more "outgoing" than a typical GSD I think. She loves getting petted by people, will go right up to anyone who is friendly (if I give her permission to approach them), but she can switch to "alert mode" in a second if needed.
