The white meat would be more healthy than the dark meat and the skin. It has less fat. But yes, you can.

Yes, perfectly safe. But don't give a lot of skin because it's fatty and can cause diarrhea or even pancreatitis. Cooked bones are also a big no-no, they can splinter and cause intestinal perforation.
