If my female dog is in heat and she mates with my male will that be it? Or does it continue til she's no longer in heat?

Will they mate once, or will he continue to want it until her cycle is finished?

They will mate as many times as they get the opportunity.
This is not the best idea, though, as I've read that puppies conceived on different days will all be born on the same day, and it may be too early for those conceived at a later date. But I've also read that that's not true, so I don't know for certain.

No to seem rude, but I hope you're not planning on letting them. See, breeding your dog requires more than basic knowledge, and complications can and do occur, some of which can kill.
If not, my apologies. ^^; Keep them separated for the entire duration of the heat cycle. The female is usually only fertile during the 2nd week (there are three weeks in all, normally), but it can vary and best not to take chances.

I don't know why people want to bred their dogs is your dogs pure breds? registered in something AKC CKC whatever... and how are you t do things if one get stuck Breached birth or if one is very large and can't come out or she just can't push anymore can you get her to push more do you know how and what if she just can't are you willing to put you hand up in her to try to get a pup out if half way out and can't go no more. now if any of the things I said you said no to you don't need to have pups after this. what if she has 10 pups you need to feed her a good puppy food then once the pup are weened (when they get teeth I do this) I soften the puppy food some for a few weeks but then dry after that do you have the cash to care for them and if pure bred you need to get shots and worm them if your plan to sell themyou need to worm them at least if not pure bred. You need cash to do all this just mating is not the only thing. Have one or the other fixed when the pups are born.
