Every dog is different, so not everything works on every dog. It also depends on how much socialization they need. If they are not aggressive at all, including not fear aggressive, you can just walk them around in public places. Keep lots of treats with you and have people give the pups treats. That way they view people as treat dispensers, which is a good thing. If they are aggressive then you "MUST" be very careful with them in public. You can get the books "The Cautious Canine" or "Scaredy Dog". Good Luck and good for you wanting to help out. :)

While socializing your own dog is not a big deal, working with dogs you don't know well carries a lot of risks. What happens if the dog/s bite someone, or another dog while in your care? Do you have experience doing this at all? Experience with fearful dogs? Know dog body language?
Dogs are individuals. There is no "one size fits all" answer to this question.
You need to spend time getting to know each dog & its issues, then make a plan.
I'm a bit surprised she is having you do this at all. Did you overstate your experience? Most shelters will start volunteers out by cleaning kennels, etc & most have a training session that is mandatory before getting access to any of the animals.
