Hoarding dog won't come out from under my bed?

Help! My recent adopted rescue Libby, will not come out from under my bed. After the first day I was able to trick her into eating by sprinkling cheese on her food.

She will eat, drink, and go to the bathroom now, only when I am not in the room.

She has yet to go outside, as I cannot coax her out.

We are on day 3, and she is currently only showing response to our cat, Elliott.

Any advice appreciated!
